A House, a Family, a Basque Story

At the heart of the village of Guéthary, between the ocean and the mountains, Maison Briketenia has embodied a distinctive vision of Basque hospitality for more than seventy years: generous, sincere and without artifice.

Born from a family spirit and driven by a passion for the craft, the house has stood the test of time without ever losing its soul, remaining true to one simple promise: to welcome guests with heart and to pass on its heritage with respect.

1952 – The Spirit of the Early Days

The story began in 1952, when Michel and Jeanne Ibarboure opened a small grocery shop in the heart of Guéthary.

As the seasons passed and local life evolved, they transformed the shop into a welcoming guesthouse.

With just a handful of rooms, a convivial table, and heartfelt hospitality, travellers quickly found a place where they could truly feel at home, nestled between the Atlantic Ocean and the Basque hills.

This first house, modest yet deeply authentic, gave rise to a spirit that has endured ever since: a living family home, filled with warmth and purpose, where hard work has always gone hand in hand with generosity and a smile.

The 1980s – Gastronomy as a Family Heritage

Their sons, Philippe, whose passion lay in the kitchen, and Martin, gifted in the art of pastry, took up the family legacy.

Having honed their craft in some of France's most celebrated kitchens—including Troisgros, Haeberlin, and Bocuse—they returned to the Basque Country with the precision, discipline, and pursuit of excellence that define the great French culinary tradition.

The family table continued to grow and evolve, earning its first Michelin star in 1983—a well-deserved recognition of their unwavering commitment to excellence.

The Ibarboure story, however, has always been one of shared ambition.

Together with their wives, Anne-Marie and Marie-Claude, Philippe and Martin embarked on a new chapter, opening La Table des Frères Ibarboure in Bidart in 1988.

Conceived as a natural extension of the family's philosophy, the restaurant quickly became one of the region's leading gastronomic destinations. There, the generosity of the Basque terroir met the refinement of French haute cuisine in a setting where sincere hospitality remained at the heart of every experience.

For more than two decades, this shared adventure defined an era and firmly established the Ibarboure name among the great names of Basque gastronomy.

2008 – The Return to Guéthary

In 2008, the story came full circle.

Martin and Marie-Claude returned to Briketenia, the family home founded by Michel and Jeanne, to begin a new chapter.

More than a homecoming, it was a return to the very heart of the family's heritage—a way of reconnecting with the spirit that had inspired everything from the very beginning.

Under their guidance, the house evolved while remaining true to its identity. The restaurant embraced a refined, contemporary culinary vision, the hotel was beautifully renovated in 2014, and a seasonal bistro was added to complete the experience.

Tradition became something living and evolving—deeply rooted, yet unmistakably of its time.

Today – The Story Continues

Today, the third generation carries the family legacy forward. David, Camille, and Pauline continue to shape Briketenia with the same dedication and sense of purpose that have defined the house for decades.

Each expresses a different facet of its identity: creativity and precision in the kitchen, grace and impeccable service in the dining room, warmth and thoughtful care throughout the hotel.

Through them, the Ibarboure spirit continues to flourish—balancing heritage with innovation, excellence with generosity, and tradition with a forward-looking vision.

From a family grocery shop in the 1950s to the elegant house it is today, Briketenia has never lost sight of what it was always meant to be: a place of life, flavour, and heartfelt emotion, where every guest is welcomed like family and leaves with the rare feeling of having truly belonged.
