Les frères Ibarboure: A Family at the Heart of Briketenia

One House, Many Faces, One Shared Passion

Behind Maison Briketenia, above all, there is a family.

Three generations united by the same guiding principles: a love of their craft, sincerity in every gesture, and warmth in the way they welcome their guests.

From Michel and Jeanne, the founders, to Martin and Marie-Claude, who shaped the house’s new chapter, and now to David, Camille and Pauline, who are carrying it forward into the future, every face, every voice and every perspective has helped shape this living story.

Michel & Jeanne Ibarboure – The Founders

It all began in the 1950s, when Michel and Jeanne opened a small village grocery shop in Guéthary.

In time, they decided to welcome travellers, transforming their shop into a family-run guesthouse.

A few rooms, a welcoming table, hard work and a natural gift for hospitality: the recipe proved successful.

They did not yet know it, but they had laid the foundations for a great family adventure.

Their generosity, common sense and humility remain, to this day, at the heart of everything Briketenia stands for.

Martin & Marie-Claude Ibarboure – The Architects of a New Chapter

Martin, the son of Michel and Jeanne, grew up in a home where cooking came from the heart.

He trained under some of the greatest names in French gastronomy, including Troisgros, Marc Haeberlin and Paul Bocuse, developing a keen sense of precision and balance.

Alongside his brother Philippe, he helped build the success of La Table des Frères Ibarboure in Bidart, before returning to Guéthary with his wife, Marie-Claude, to breathe new life into the family home.

Marie-Claude, originally from Roanne, also trained in some of the finest establishments.

Her career took her from Germany to London, from Saint-Tropez to Italy, before bringing her to Maison Troisgros, where she met Martin.

They shared the same vision of their profession: a balance between rigour and humanity, high standards and gentleness.

In 2008, they brought Briketenia back to life, creating a place that reflected who they were: elegant, sincere and deeply rooted in its identity.

Under their guidance, the house became a gastronomic restaurant, a charming hotel and a welcoming bistro all at once — a complete, warm and generous place, open to its surroundings and deeply connected to its local roots.

David Ibarboure – Curiosity as a Legacy

The son of Martin and Marie-Claude, David grew up in the kitchens of the house.

For him, gastronomy was never a career choice; it was simply part of who he was.

After training at the hotel school in Biarritz, he set out to discover the world, to learn, understand and broaden his horizons: L’Oasis in Mandelieu, Le Pralong in Courchevel, Chefs de France in Orlando, then Sketch in London and the Mandarin Oriental in Hong Kong, both under the culinary direction of Pierre Gagnaire.

These years of experience shaped his vision and helped define his personality: curious, humble and open-minded.

In 2008, he returned to Guéthary to join his parents.

Alongside Martin, he developed a culinary language shaped by four hands, at the crossroads of tradition and modernity.

The father passes on his knowledge, the son takes it further, and together they create a shared signature: clear, sincere and firmly rooted in the quality of the ingredients.

Today, David embodies the clear, inspired cuisine that lies at the heart of Briketenia.

Camille Ibarboure – The Elegance of Connection

David’s sister, Camille, found the same natural calling in hospitality as the rest of her family.

She trained in hotel and restaurant management in Biarritz, followed by studies in wine and sommelier service in Bordeaux, where she further developed her sensitivity through her experience with Pierre Gagnaire at Gaya in Paris.

Her appreciation of wine soon became a true passion, and her thirst for discovery took her across Australia, South America, Asia and North America, on a year-long journey around the world.

Upon her return, she joined the sommelier teams in Courchevel and Val d’Isère, notably at L’Atelier d’Edmond, alongside Benoît Vidal, where she experienced the restaurant being awarded its second Michelin star.

In 2015, Camille returned to Guéthary and took charge of the dining room alongside her mother.

Combining high standards with genuine care, she brings her energy, natural elegance and passion for wine to the Briketenia experience, helping it evolve with sensitivity and intuition.

Pauline Ibarboure – A Fresh Perspective on the House

Originally from Chartres, Pauline first discovered the world through travel before finding her place in hospitality.

After studying international business and spending time in the United States, she turned towards the family hospitality business, eventually settling in the Basque Country to take on a versatile role at Hotel Briketenia.

It was love at first sightfor the region, for the house, and soon for David.

Her role evolved naturally. She gradually took responsibility for the hotel, reimagined its interiors alongside Camille, oversaw guest relations and became closely involved in communications and the day-to-day life of the house.

Her smile, gentleness and eye for detail bring a fresh energy to Briketenia, creating a natural connection between its different worlds and generations.

One family, one shared flame

From Michel and Jeanne to David, Camille and Pauline, Maison Briketenia has always been a story of balance: between hard work and affection, rigour and generosity, high standards and simplicity.

Perhaps that is the true secret of the house: a united family, continuing to move forward together without ever losing sight of what truly matters.
